Ingredients:
1. 2 tbsp Vegetable oil.
2. 1/2 Onion diced
3. 1 bay leaf
4. 2 Potatoes, unpeeled and chopped.
5. 1 tbsp Ginger Garlic Paste.
6. Salt and Pepper to taste.
7. 2 1/2 cup water, 5 tbsp Corn flour mixed with water (Broth).
8. 1/2 cup Cheese, grated.
9. 1 Small Green chilli.
10. 3 Green Onions.
Preparation:
1> In a large soup pot, sautee the diced onion, Ginger garlic paste and chopped green chilli in the Vegetable oil for 3 to 5 minutes, until onions are soft. Add the chopped potatoes and sautee for a few more minutes.
2> Add the Broth, bay leaf and salt and pepper.
3> Bring to a boil then reduce to a simmer. Cover and allow to cook, stirring occasionally, for 20 to 25 minutes, or until potatoes are very soft.
4> Remove the bay leaf, Return the soup to the pot and add cheese. Stir over low heat until the cheese has melted.
5> Garnish with green onions
